Grilled Mahi Mahi Tacos with Pineapple Mango Salsa

It was a tasty night here at the Smith house!  It all started from the fact that I had some Mahi Mahi and couldn’t decide what to do. After searching Pintrest of course for some visual inspiration we created a flavorful dinner that we will DEFINITELY be having again!

Tropical Fruit Salsa

1 cup fresh pineapple, diced
1  cup fresh mango, diced
1 cup fresh Papaya, diced (we didn’t have this on hand so we increased the pineapple and mango to 1 1/2C of each)
1/4 cup finely chopped cilantor
1 tablespoon grapefruit juice (you can also substitute lime juice which we did as well)
1 tablespoon white rum
1 scotch bonnet or habanero pepper (we used a sweet red bell pepper)
1/4 cup finely chopped red onion
1-2 teaspoon honey
1 garlic clove, finely minced
salt and pepper to taste

Start off by making the salsa and let it sit in the refrigerator while you grill.  4 (8oz) Mahi Mahi fillets and rub them with the jerk seasoning.   When grilling your mahi mahi be careful not to over cook the fish or it will become tough.  Place the fillets on a clean hot grill either on top of aluminum foil or you can lightly oil the grill.  Cook until the flesh changes color and carefully flip it over.  Make sure to cook it until it reaches 145 degrees, it is opaque white and has a flakey texture.  You can find some great tips for cooking fish here.

Jerk Seasoning

2 tbsp. black pepper
1 tbsp. onion powder
1 tbsp. garlic powder
1 tsp. cayenne
1 tsp. ground red pepper

While you are waiting melt a little bit of butter in a bowl and mix in a pressed glove of garlic.  Brush the mixture on one side of your tortillas and grill them while you are waiting on your fish.  Trust me its YUMMY!!

4 (8oz) Mahi Mahi fillets
8 soft flour tortillas
2 cups sour cream
2 tablespoons lime juice
2 cloves pressed garlic
2 limes (garnish)
cilantro (garnish)
